Day 7 -2016

Sunday comes around so quick.  The sun is shining, I am feeling better and stronger and I wanted to share this picture with you which sums up how I felt this morning although I didn't struggle to get up and get going :)



After a morning of doing lots of laundry and then heading out for food shopping, I am now back home, having prepared our lunch of pure protein goodness:

Miso soup with rice noodles and Tofu Satay


Below is the recipe for making these delicious tofu satay.

Tofu Satay

1 block of firm tofu (280g), sliced into cubes

Satay Sauce
1/2 cup of coconut milk
1/4 cup hot water
3 tbsp smooth peanut butter (you can also use almond or cashew butter)
2 tbsp tamari soy sauce
1/4 tsp smoked paprika, 1 tsp maple syrup or agave
Mix the sauce all together
Add tofu cubes to sauce and marinade for about 15 minutes
If you have skewers, use these to put about 6 pieces of tofu per skewer
If not, just spray a flat baking tray with olive/sunflower oil and lay the cubes on top
Grill for about 20 minutes, making sure you keep any eye on the pieces so they don't burn.

Meanwhile, with the left over sauce, put in a small saucepan and gently warm on a low heat.
Make sure you mix continuously as the mix will easily stick and burn (5 minutes in total)
When the colour has changed to a darker shade of brown, the sauce is ready.

Serve tofu cubes on a side of salad and a spoonful of the sauce. 
A wedge of lemon also adds to this delicious dish.

The rest of the day is going to be spent preparing some food and cakes for an order tomorrow and then relaxing towards the evening.
