Day 3 - 2016

I woke up early (6.30am) feeling a little groggy this morning however I got up, drank a glass of water, brushed my teeth and headed out for a quick early morning walk (20 minutes).  Water I know is very important.  Although I know this fact, I don't drink as much as I should however I now keep a track to ensure I drink enough, regularly throughout the day as the body needs to keep hydrated.  I swear by the fact that 'water' is the one 'superfood/natural essential' that the body needs that has kept my mum healthy to this day and seeing her consume this regularly throughout the day, in a number of delicious looking ways, inspires me to stay regular :)




Coming back home, I felt refreshed and my head had cleared itself of its cobwebs :)

After taking my acid pill, then some aloe vera & other supplements with about 1 litre of water I felt full however I know how important it is to have breakfast, so after waiting about half an hour, I had my usual bran flakes and added some walnuts and fresh blueberries to this mix.



Now settling down to review the days tasks and activities and more project planning.  That is after waiting for the 'fence guy' to come and fix 2 of our fences that blew down in some heavy winds a few weeks ago, and he is over an hour late (supposedly broken down!) and I am getting irritable although trying to keep my self positively busy whilst sipping away some green tea and lemon...ahhhhhh that's better :)

 

Below is a wonderful chart that shows you some benefits of drinking tea.  Again this is another one of those essential ingredients we should all make good use of in order to fill the body with the right properties to combat and fight against many ailments/diseases we face in this new world of ours.



I am planning 'Virtuoso Foods' attendance at Brighton VegFest at the end of February and we are trialling some delicious recipes to offer you.  Earlier, I made 'Tofu, Potato, Quinoa & Coriander' burgers and they tasted gorgeous so this could be a strong contender.  I have put the ingredients of this below so you can try this at home.


Tofu, Quinoa & Potato Burgers

1 cub firm tofu (250g)
2 small red skin potatoes (red skinned potatoes/Desiree, has less natural sugars then any other type of potato)
1/2 cup of cooked quinoa (steamed in a little water for 20 minutes)
1 tablespoon of chopped coriander
Pinch of salt and pepper
Pinch of cinnamon and nutmeg (optional but tastes lovely and warming)

Mash the tofu and potato up with a potato masher or with a fork.  Mix in the quinoa, herbs and spices.  Use your hands to ensure that the mixture is binded well together.  Shape into round burgers.  Shallow fry with sunflower or olive oil until golden brown (about 5 minutes on each side).

Alternatively you can bake in the oven by spraying your oven dish with sunflower or olive oil spray, placing the burgers in the dish and then spraying once again.  Bake in the oven for about 30 minutes, until golden brown at 200C.

This burger is vegan and gluten free.  Happy days.

Now back to work.

1145am lunch 
I had a couple of my delicious tofu burgers with steamed broccoli and sprouts, trying to use all the left of veg in the fridge left over from Christmas. 

After lunch I worked some more and then headed to out to do some shopping.

4pm break   I had approx. 1 litre of water and a banana and pear.

6.30pm Dinner
This consisted of a slice of my special gluten free bread with a huge avocado and feta cheese greek salad.  It was so tasty, whenever I think about it, my mouth waters.  However I have come to the conclusion that I really need to prepare and plan my meals better so that I am not just eating the same foods over and over again because before long, boredom will set in, I know.  So meal planning will take place today.

7pm: gentle 20 minute workout on my swiss ball to start building my core muscles which in turn I hope will strengthen my back.  It isn't easy when you are constantly in pain so I don't want to push it.  At the moment I am on the waiting list to see a specialist for my back at Bedford Hospital and I hope this happens within the next few weeks.  Until I know what is going on internally, I can't push things too much physically but I know movement is important hence the walking and gentle core exercises.

It is not 9pm.  After having a nice hot shower to cool my aching muscles, back and nerves, to sum the day up, it has been quite a productive day with a couple of potential client orders and more prepping and planning for VegFest Brighton.  After catching up with my personal diary I will call it a night.  Until tomorrow my friends x
